Raptor Ridge welcomes Chef Dustin Joseph of Biscuit and Pickles (McMinnville) for our second annual "Auxtoberfest." To compliment a selection of Alsatian wine, Chef Joseph will be preparing a selection of canapes, small bites and passed appetizers for our guests to enjoy. Menu includes:  

Pate campagne bite with strawberry gelee

Crisp fingerling potato, caramelized mustard aioli, micro greens

Local mushroom duxelle with briar rose goat cheese, olive oil crostini

White wine coq au vin bite with rosemary polenta, mire poix

Grilled summer sausage with house made sauerkraut, german sweet honey mustard

Smoked pork loin, local peach coulis, crisp shallots  

Pistachio dusted profiteroles with foie gras mousse

Braised lamb leg, white cheddar potato gratin, truffle demi glace 

Late summer pickled vegetables with herbed olive oil

Domestic and imported charcuterie platter with accoutrements and crostini

Imported and local cheeses with dried fruit and variety of nuts

Previous wines have included producers such as Meyer-Fonne, Domaine Ostertag, and Domaines Schlumberger. Guests will be able to taste the release of the 2016 Auxerrois, and purchase the wine for $30/bottle.
